About Søren

Søren is responsible for innovation and concept development at .506, and for driving the company’s sustainable profile forward. Søren’s sustainable path was initiated at Noma, which he left after eight years to change the food profile at Herlev Hospital with the purpose to create happiness and health among the patients including specialising in diets for cancer patients.

Previously Søren has worked at El Bulli, Per Se, Noma, was head of the Nordic Food Lab, and he has been the co-owner of the Michelin restaurant Studio and Almanak.

Søren is also active in the global Cradle to Cradle network with William McDonough and part of the Vatican’s think tank Laudato Si’ Challenge.
